Moody Tongue, the world’s first brewery to earn Michelin Stars, is bringing its visionary culinary brewing concept to Florida with the debut of Moody Tongue Sushi West Palm Beach on Jan. 7. Located within the newly renovated Hilton West Palm Beach, this marks the latest addition to the brewery’s illustrious portfolio, combining artful brewing and elevated Japanese cuisine under one roof.
Spearheaded by acclaimed Brewmaster Jared Rouben and executive sushi chef Hiromi Iwakiri, the intimate dining space offers an exquisite 15-course omakase experience, celebrating hyper-seasonal ingredients and inspired beer pairings. The design, mirroring the brand’s refined ethos, incorporates a 14-seat omakase counter, rich banquette seating, and coastal-inspired tones that nod to the vibrancy of the menu and the surrounding Florida landscape.
The dining journey unfolds with precision, where each course is thoughtfully paired to highlight both the dish's flavors and the beer's artistry. Guests will savor offerings like Hokkaido Sea Scallop with edamame and Ossetra caviar, complemented by a Pressed Asian Pear Saison, and Florida Stone Crab Hand Roll adorned with green apple and sauce dijonnaise, paired with a Cherry Oud Bruin.
This meticulous attention to pairing continues throughout, with a curated selection of Moody Tongue’s signature creations, such as a shaved black truffle rice lager and the regionally inspired Grapefruit Gose, crafted with Florida ruby red grapefruit. Rouben’s approach, blending a chef’s perspective with brewing innovation, ensures that every sip and bite is a harmonious celebration of flavor.
