Legendary chef and restaurateur Costas Spiliadis will bring his world-renowned estiatorio Milos to West Palm Beach on Feb. 6, marking a significant milestone as the brand’s second Florida location and twelfth globally. Nestled within the prestigious One Flagler, a Class A+ lifestyle office tower by Related Ross in the Flagler waterfront district, Milos is set to redefine the city’s culinary landscape. With its authentic Greek flavors, contemporary sophistication, and seamless blend of elegance and hospitality, the two-floor restaurant offers an unparalleled dining experience inspired by Greece’s natural beauty and textures.
Founded in Montreal in 1979, estiatorio Milos has long been celebrated as the pinnacle of fine Greek dining, renowned for its dedication to fresh, meticulously sourced ingredients. Its signature fish market, featuring seafood flown in daily from the Mediterranean, reflects a commitment to quality that has become synonymous with the Milos name. The West Palm Beach location embraces the spirit of philoxenia, the Greek tradition of warm hospitality, inviting guests to partake in family-style dishes that celebrate connection and the vibrant flavors of Greece.

Central to the Milos experience is the stunning fish market, where guests are guided by their designated captain to select from an extraordinary array of whole fish, shellfish, and live crustaceans. This fresh selection is then prepared with expert precision, whether served as sashimi, grilled, or baked in sea salt.

Signature dishes like the tuna tartare with Milos' exclusive extra virgin olive oil and the Milos special—a harmonious blend of paper-thin zucchini, eggplant, saganaki cheese, and tzatziki—further exemplify the restaurant’s artistry. Desserts, including the real Greek yogurt with walnuts and thyme-infused honey from Kythira, add a sweet yet refined conclusion to the dining experience. The restaurant also boasts an exceptional wine program featuring indigenous Greek varietals like Assyrtiko, Xinomavro, and Agiorgitiko, sourced from Santorini’s volcanic soils and the Peloponnese's rugged slopes.
Designed by Tara Bernerd & Partners, the 294-seat restaurant is a masterpiece of contemporary elegance, seamlessly integrating Greek design elements into its architecture. The open-plan dining space, crafted from Pentelikon marble, oak planks, and textured stone, flows effortlessly into an outdoor terrace adorned with olive trees and soft water features. A reinterpretation of Milos’ signature staircase adds a touch of drama, while custom banquettes and artwork by Evridiki Spiliadis reflect the restaurant’s artistic essence.
