What’s the catch of the day in Palm Beach? After 12 years of representing a handful of the delicacy’s labels, caviar aficionado Maribel Alvarez has recently launched her own—Altima Caviar (altimacaviar.com)—inviting Palm Beach to indulge in its namesake specialty.

“Palm Beachers love caviar, not just for special occasions,” says Alvarez, founder and president of Altima Caviar. “For over 25 years, Altima has earned a reputation that hinges on quality and trust. We’ve represented various national brands in the past and feel very comfortable in the space. We are excited to see our brands in local restaurants and at our friends’ homes.”

Sourcing its egg s from top-quality farms from around the world, Altima delivers nothing short of excellence in every tin. Off ering world-class selections of osetra—Sakadami Classic Black and Anagami Superior Black—farmed in Israel, the decadent dish can be enjoyed locally at Mary Mahoney, Cod & Capers, Bice Ristorante and La Goulue.

“Altima Caviar selects the best grades from various sources,” says Alvarez. “At this time, our selections include the superior osetra from Israel, which we refer to as Anagami, and the beluga hybrid from Italy. We continue to sample Russian caviars farmed in different parts of the globe, and when they meet our exceeding expectations, we add them to our exclusive lineup.”
